While my housemate tucked into some store brought ice cream, I quickly rustled up some scrummy peanut butter nicecream . It was really lucky I had a chopped banana in the freezer for just the occassion. There's nothing like being a little prepared.
This was exactly what I wanted and it hit that sweet spot, I decided to top the nicecream with chia seeds, peanut butter and cashews.
Serves: 1
Time to prepare: 10 - 15 minutes or 2 - 3 hours (see below)*
Ingredients...
1 banana chopped and frozen*
1 tbsp peanut butter
Toppings:
1 tsp Peanut butter
1/2 tsp chia seeds
Handful of cashew nuts
How to create...
First, slice your banana (the thinner the slices the better) and add them to a freezer bag/ container and pop them in the freezer. * This will take 2 - 3 hours unless you've already got some in the freezer.
Once the banana slices are frozen, take them out of the freezer and let them sit for 5 minutes.
Next, put the banana and peanut butter into a food processor and mix until smooth. During the whizzing, use a spatula to scrape down the sides to make sure everything mixes together.
Finally, add the nicecream to your favourite bowl and add your toppings. It's that simple!
* Top tip: Chop up a banana and always have it frozen in the freezer for unplanned nicecream cravings. Bananas can last for up to 6 months in the freezer. Just remember to label the container/ freezer bag with the date.
