Tonight I find myself munching on a big bowl of kale chips .... Kale has so many awesome properties there is literally no reason not to eat them! Oh and turned into chips means I just want to nom! It's that perfect crunchy snack or way to add more green to your dish. I find myself having kale chips with my sweet jacket potato, in salads, in a wrap, to snack on and the list could go on... What are you waiting for?
Here's a little secret... this is the only way a fussy eater in my house will eat some leafy greens. So perhaps give them a go if you're a little wary of green foods or someone you know refuses to eat them.

Time to prepare: 3 minutes
Time in the oven: 8 - 10 minutes
Ingredients...
A couple of handfuls of kale*
1-2 tbsp melted coconut oil / extra virgin olive oil
Sprinkle of Himalayan pink salt
* The oven likes to eat kale so bigger handfuls are better. Adjust to the amount of people you're feeding by multiplying the recipe.
How to create...
Preheat oven to 180' / gas mark 5
Mix all the ingredients together on your baking tray / oven dish.
Bake for 8 -10 minutes, moving around every so often to get an even crisp.
